I have been so so terrible at posting lately but please forgive me because it was my birthday on the weekend! And while I did have grand plans to make a cake the day before and get it all ready to post it just didn’t happen. I had a huge weekend, with one of my best friends leaving to move to Melbourne, a Kanye West concert, a work ball, father’s day and my birthday… and so the cake just did not happen.
Hopefully these lemon, macadamia and coconut bliss balls will help to persuade you to forgive me. I promise to come up with some goodies in the next few weeks. After all, I did get a fancy new food processor for my birthday!
With summer getting closer I have been going crazy about lemons. I made these a few weeks ago and had so many requests for more. I have since made them with almonds instead of macadamias and that worked a treat too. Stay tuned for some more lemony treats, but for now I am going to cut to the chase and give you the recipe!
Macadamia, Lemon and Coconut Bliss Balls
Dietary Information: Dairy Free, Egg Free, Gluten Free, Raw, Refined Sugar Fee, Vegan, Wheat Free
Prep Time: 15 mins (including rolling time)
Makes: about 20-30 bliss balls, depending on how big you want them
- 1 and 1/2 cup macadamias
- 3/4 cup desiccated coconut
- zest of 1 lemon
- 1 tbs lemon juice
- 1/2 cup dates, soaked
Soak the dates the night before if you can. Otherwise, boil some water and pour over the dates and let them soak for 10 minutes.
Combine macadamias, coconut and lemon zest in food processor and blend.
Add the dates and continue to blend, adding a little bit of the water you used to soak the dates if they aren’t sticking together.
Roll into balls and roll in extra coconut if desired.
