Can you believe it is already March?! I don’t know where this year is going, but this new Frankie’s Features series really does ease the pain of another month disappearing, because I get to think about what I have to look forward to, and this month it is pomegranates. In Western Australia at least, pomegranates do start to appear in the supermarkets in December, but I find they are never quite as good as they are in March and the following months.
I love these juicy little seeds in savoury dishes such as salads, but I have started to come around to adding them to sweet things, so below you will find a pretty even split of sweet and savoury dishes featuring the delicious sweet and sour pomegranate.
Frankie’s Features : Pomegranates
To start, we have this beautiful looking Mango, Nectarine and Passionfruit Semifreddo with Fresh Berries and Pomegranate Seeds by What Katie Ate, which I would love to try and make with coconut cream and maple syrup instead of cream and eggs.
Next up, this delicious Caramelised Butternut, Crispy Kale and Fontina Pizza topped with pomegranate seeds by the one and only Half Baked Harvest. I will be making this on a gluten free pizza base such as this one from Mr Jamie Oliver.
And another one from Half Baked Harvest, because I simple couldn’t resist. This Pomegranate Sesame Chicken with Ginger Rice Pilaf, which all you gluten free eaters can eat with no problems, just use gluten free flour (or omit it all together) and remember to use gluten free soy sauce. If you are vegetarian or vegan I think this would be delicious without the chicken, just add some protein and use vegetable stock instead of chicken.
Or how about this raw, vegan Chai Spiced Chia Pudding with Pink Peppercorn Pomegranate Sauce from Whole Hearted Eats.
And these pretty Pomegranate Yogurt Bowls from 101 Cookbooks. Vegans can use coconut yogurt instead of greek, and maple syrup in place of the honey.
And now, if you can read German, then hop on over to Trickytine and make this amazing looking Brownie Cake with Chocolate Mousse and Pomegranate! If not, Google will translate it for you 😉 I need to do a bit of experimenting with this one to make it vegan and gluten free so let me know if you want to see the end product.
And back to English, these Fish Tacos with Pomegranate Salsa from Turntable Kitchen, just make sure your corn tortillas don’t contain any wheat if you are gluten free (this might sound silly but in Australia, they try and sneak wheat into everything, even corn flour!)
And this one which I have been making for years and still love just as much as I did the first time I made it, Pomegranate, Kale and Wild Rice Salad with Walnuts and Feta from Pinch of Yum.
These Roasted Eggplants with Buttermilk Sauce and topped with pomegranates, which look very similar to an Ottolenghi recipe I remember eating and loving a year or so ago.
And finally, these Pomegranate Scones from Fine Craft Guild. If anyone has a good gluten free scone recipe please let me know!
And remember, if you make any of these I would love to hear about it, or see it on Instagram, Facebook or Twitter. Just tag me @frankiesfeast or use the hashtag #frankiesfeast.
